教你品尝红酒的步骤

Let you know the steps for red wine tasting

在酒入口之前,先深深在酒杯里嗅一下是一般人喝红酒的做法,而真正懂的酒的人在品酒后一定会闻酒塞。

Generally, before drinking, drinkers will smell the red wine in the cup. But a wine connoisseur is sure to smell its corked flavor after tasting the wine.

 

第一步:酒温 冰镇后红酒味道较涩

The first step: The temperature of the wine   It tastes acerbic after being iced.

传统上,饮用红酒的温度是清凉室温,1821摄氏度之间,在这温度下,各种年份的红酒都在最佳状态下。一瓶经过冰镇的红酒,比清凉室温下的红酒丹宁特性会更为显著,因而味道较涩。

Traditionally, the temperature for red wine drinking is chilled room temperature, which is between 18-21 With the temperature, red wines with different birth dates will show their best conditions. An iced red wine will have a more tannic acid character than those in chilled room temperature. So, it tastes acerbic.

第二步:醒酒 红酒充分氧化后才够香

The second step: Waking up the wine    It will be fragrant after a process of enough oxidation

一瓶佳酿通常是尘封多年的,刚刚打开时会有异味出现,这时就需要唤醒这支酒,在将酒倒入精美的醒酒器后稍待十分钟,酒的异味散去,醒酒器一般要求让酒和空气的接触面最大,红酒充分氧化之后,浓郁的香味就流露出来了。 

Particular tastes will appear when a long-time stored excellent wine is opened. Just then, the wine should be “aroused.” The particular tastes will disappear after the wine is poured into a fine wine-making facility for ten minutes. The facility provides a widest interface with air and let the wine have an abundant oxidation. Then, rich fragrance will appear.

第三步:观酒 陈年佳酿的酒边呈棕色

The third step   Wine watching    A color of brown will appear on the edge of an aging excellent wine

红酒的那种红色足以撩人心扉,红酒斟酒时以酒杯横置,酒不溢出为基本要求。在光线充足的情况下将红酒杯横置在白纸上,观看红酒的边缘就能判断出酒的年龄。层次分明者多是新酒,颜色均匀的是有点岁数了,如果微微呈棕色,那有可能碰到了一瓶陈年佳酿。

The red of the wine make people exciting. The basic requirement for serving is without spillage out of cup. With enough light, put the red cup on a white paper, you can judge the age of the wine from watching its rim. New wine characters many clear levels; A  aged red wine should has a symmetrical color; If the wine presents brown, it could be an old vintage wine.

第四步:饮酒 让它在口腔内多留片刻

The fourth step: drinking   let it stay in your mouth longer

在酒入口之前,先深深在酒杯里嗅一下,此时已能领会到红酒的幽香,再吞入一口红酒,让红酒在口腔内多停留片刻,舌头上打两个滚,使感官充分体验红酒,最后全部咽下,一股幽香立即萦绕其中。

Before drinking, the taster should breathe deeply in the cup to learn about its fragrance. Then swallow the wine and let it stay in your mouth and beside your tongue for a bit long time. This will let your sense organ have an enough feeling for the wine. At last, the taster swallows all the wine and a faint fragrant arise.

第五步:酒序 先尝新酒再尝陈酒

The fifth step: Drinking sequence   New and aged wine should be drunk one after another

一次品酒聚会通常会品尝两三支以上的红酒,以期达到对比的效果。喝酒时应按照新在先陈在后、淡在先浓在后的原则。

Usually, one wine tasting party will taste over two or three red wines so as to reach contrastive effects. When drinking, the sequence of new wine and light wine should be tasted firstly is a rule.

品红酒要坚持三步曲

  观色 观察酒的颜色,一是欣赏其迷人的色泽,二是根据色泽判断酒的新鲜度。先将杯向前倾斜,从杯侧看液面,观察透明度和澄清度,巅峰状态的红酒拥有最丰富的天然葡萄红;年代较远的红酒会呈现棕啡色,透明度越高越健康。

Color observing 

Through observing the color of the red wine, you can appreciate its enticing color at one hand. On the other hand, the fresh level of the wine will be judged by its color. The taster should lean the cup and observe the liquid surface beside the glass for getting its transparency and clarity. The red wine at its peak form boasts the best lavish and natural grape red, while the aged ones will appear brown. The wine will be much healthier when it holds a better transparency.

  闻香 先将杯子以倾斜的角度送到鼻子前端,先闻葡萄酒静止状态下的香气,继而以画小圆圈的方式轻摇酒杯。红酒除了葡萄丹宁酸味还有橡木桶味、胡椒味、果味、淡香草味、黑加仑子味,醇正香芬,正是优质红酒所独具的风范。

Smell fragrance

 

Firstly, the red wine in a stationary condition in a cup should be leaned and sent to the tip of noses to taste its fragrance. Next, you can swirl the wine. Apart from grape tannic acid, the taster could smell such flavors such as oak bottle, pepper, fruity, light vanilla, and black current. The pure flavor is just the unique style specially possessed by a classic red wine.

  品尝 饮用极品年份红酒,不能狼吞急咽。最好啜取一小口含在口腔,然后用舌头搅动几下,让酒与舌面充分接触,并让味道在口腔中慢慢扩散开。接着嘴唇微张轻吸一口气,让酒香充满整个鼻腔,这时要稍稍屏气,再将气自鼻腔吐出,此时会感觉到令人激赏的浓郁甘醇充塞整个鼻腔。最后让酒轻轻滑入喉咙,品其余韵。一杯好的葡萄酒,应该是酸度、甘甜度(酒精)和丹宁三者的均匀调配。

Taste

For drinking a masterwork certain year red wine, it is not a good idea to toss it off. It is better to drink a little and let you tongue have a full touch with the wine by means of mixing the wine and let the flavor have a slow diffusion in oral cavity. Then, the taster should open his or her mouth and inhale air as well as breathe through his or her nose. At this time, you can hold you breathe and then blow off steam from your nasal cavity. You will fell an exciting, strong glycol fill up the entire nasal cavity. At last, the taster can let the wine slip into his or her throat and experience its aftertaste. A glass of good grape wine should blend acidity, sweetness (alcohol) and tannic acid evenly.
